In Calistoga, our week was spent pressing the last Merlot tanks. Next week we will press the last tanks of the vintage. The malolactics are bubbling away and we can see the end of the harvest season nearing.
At Twomey West, the last Pinot Noir tanks are beginning to ferment after their cold soak. We continue to press as tanks go dry and come into tannic balance. The wines are showing their regional pedigree beautifully. The Anderson Valley wines were particularly impressive this week. 2008 will prove to be a vintage that celebrates the distinctive character of each of the appellations from which we source fruit.
