Soutirage Traditional - A Brilliant Approach

The key to Twomey Merlot’s incredibly expressive flavors and aromas is a technique called soutirage traditional. Used by the leading Bordeaux chateaux for generations, soutirage is rarely used outside that region. In fact, Twomey Cellars is one of only a few California wineries to use this labor-intensive process.

Pouring wine from cask

Several times during aging, Twomey Merlot is slowly decanted from barrel to barrel, leaving the sediment behind. Performed using gravity rather than a pump, this gentle racking method softens the tannins while clarifying the wine to a crystal-clear brilliance. In the process, it creates the lush mouth-feel and voluptuous flavors that make wine lovers passionate about our Merlot.

The 2004 Twomey Merlot exhibits all the benefits of our time-honored winemaking techniques. Elegant and concentrated, the wine fills the mouth with its bright, seductive flavors. Its intoxicating bouquet and silky texture linger on the palate and in the memory long after the last sip.
