The key to our Merlot’s expressive aromas and flavors and silky texture is a technique called soutirage traditional, used by leading Bordeaux chateaux for generations. Several times during aging, the wine is decanted from barrel to barrel, leaving the sediment behind. Performed using gravity rather than a pump, this gentle process softens the tannins while clarifying the wine to a crystal-clear brilliance.
Twomey is one of only a few California wineries to use this labor-intensive method.
